Ahmet Kadıoğlu, the managing partner of Hayfene Spice, which has been serving in the industry for five generations, insists that the secret to delicious food lies in the spices used and explains the key points in choosing a quality and fresh herbs.

In today's rapidly globalising and multicultural world, bringing flavours from different geographies to other regions is becoming more possible. Among these, spices, which open the door to unique tastes, play an increasing role in trade. According to data disclosed by Statista, the global spice market, which closed in 2022 with $79 billion, is predicted to leave this year behind with $126 billion. Consumers, on the other hand, are seeking how to find fresh and healthy spices. Ahmet Kadıoğlu, Managing Partner of Hayfene, a spice producer serving in our country for five generations, sheds light on the tricks to finding fresh herbs and changing consumer habits.

"Using the right spice can make you feel like a world-famous chef," says Ahmet Kadıoğlu, Managing Partner of Hayfene Spice. "Spices are the most important element in giving flavour to food. Of course, using fresh spices plays an important role in finding this taste, and there are a few ways to distinguish fresh spices. The first of these is the colour of the spice. Fresh spices have brighter and more intense colours, while stale ones turn pale and lifeless. Also, when we smell fresh spices, we get a strong, sharp, and aromatic scent. Spices with a strong aroma add a unique flavour to the food, leaving a distinct mark on the palate. The freshness of grain and leaf spices can be determined by crushing a small amount of spice in your hand and smelling it. Moreover, storing spices in an environment where suitable temperature and humidity are established is very important," he says.

Spice usage habits are changing in Turkey

Ahmet Kadıoğlu, who points out that the safest way for consumers who have trouble finding quality spices is to prefer branded and packaged products, also touches on changing spice usage habits in Turkey, saying, "In the past, apart from a small group, the spices used by consumers were limited. Today, the number of spices used in homes is increasing, and people are adopting a more open-minded approach to trying innovative products. We follow changing habits and produce innovative products to respond to consumer interest. For example, our Elements Series, with the slogan 'Create your flavour universe in the kitchen', consists of 5 different flavour combinations. The Fire spice mix is used for red meats and grills, while the Water spice mix is used for fish and seafood.
On the other hand, the Air spice mix is chosen for poultry, and the Earth Spice mix is preferred for vegetables. Finally, we have a spice mix called the 5th Elemesssnt, which is used for all dishes and has an umami flavour. We think this spice will become a classic in all kitchens."
